2025 Blanc de Blanc
A sparkling wine made from 100% Hunter Valley Chardonnay grapes, harvested early to retain the acid spine which is so important to this style. Made using the Charmat method which allows the fruit to shine, this wine has a strong, fine bead and is pale straw in colour.
The wine possesses aromas of green apple, citrus, and peach and just a hint of bready yeast character. The palate has flavours of green apple, pear and citrus and possesses a dry and long acid finish. It is a good accompaniment with appetisers, seafood, or poultry dishes or it can also be enjoyed by itself with a mild cheese.
