Braised Lamb Shanks with 2023 Primera Chardonnay

Rich, tender, and surprisingly simple, these braised lamb shanks are the ultimate comfort dish with a touch of elegance. Pair them with our 2023 Primera Chardonnay, and you’ve got a meal that’s as easy to make as it is impressive to serve. Whether it’s a casual dinner or a special occasion, this recipe brings effortless sophistication to your table.

The Recipe

Prep time: 10 minutes | Cook time: 2 hours 30 minutes

Ingredients (Serves 2-4)

  • 2–4 lamb shanks
  • 1 cup 2023 Primera Chardonnay
  • ½ cup reduced-salt soy sauce
  • 1 cup beef stock
  • 1 cup maple syrup
  • 1 large onion, chopped
  • Optional: Fresh herbs like rosemary or thyme for garnish

Method

  1. Preheat your oven to 150°C (300°F).
  2. Prepare the lamb: Place the lamb shanks in an ovenproof dish with a lid.
  3. Add the marinade: Pour in the Chardonnay, soy sauce, beef stock, maple syrup, and chopped onion. Ensure the lamb is fully immersed in the liquid.
  4. Cook low and slow: Cover the dish with the lid and bake for 2 hours, checking occasionally to make sure the liquid hasn’t reduced too much. Add extra stock or wine if needed.
  5. Finish to perfection: Remove the lid and bake for an additional 30 minutes, allowing the sauce to thicken and the lamb to develop a rich, caramelised glaze.

Serving suggestion: Pair with creamy mashed potatoes, roasted vegetables, or a crisp side salad. A sprig of rosemary or thyme makes the perfect garnish.
